Wild Raspberries are ripe on the bushes and before the birds got to them, we snatched up a few pints to make one of our favorite cocktail mixers, the Shrub. This sweet-tart fruit syrup can be enjoyed alcohol-free mixed with club soda or can be combined with your favorite spirits to make bright mouthwatering cocktails that are real crowd pleasers. The sweet comes from sugar and fresh wild raspberries, the tart from vinegar which offers up a lively acidity to the mixer. We serve it as a highball, tall with light Rum but it plays equally well with Vodka or Gin!
Wild Raspberry Shrub Highball In a tall glass filled with ice add:
Top with Club Soda. Stir well and garnish with a spear of fresh wild raspberries.
Wild Raspberry Shrub In a medium sized saucepan add:
Bring to a boil stirring to dissolve the sugar then add:
Reduce heat and simmer till reduced by 1/3 then add:
Bring back to a boil, reduce heat and simmer for 10 minutes. Cool and strain syrup through a fine sieve (pressing out and discarding raspberries). Put up in a sterile glass bottle. Will keep refrigerated for 10-14 days.
