Mr. Bali Hai Cocktail

Feeling a bit tropical today, we share with you a classic Tiki drink that originated at the Polynesian restaurant, Bali Hai on Shelter Island in San Diego California, circa 1954.  The recipe has gone through many variations, but we offer you the version that endured through the 1970’s and has settled in as the house’s signature drink.  Traditionally served out of a ceramic Mr. Bali Hai Tiki Head, should you not happen to have one lying around, an oversized tumbler will do.  Manuia!   

Mr. Bali Hai Cocktail

In a shaker glass filled with crushed ice add:

• 1 Ounce Lemon Juice
• 1.5 Ounces Pineapple Juice
• 1/2 Ounce Simple Syrup
• 2/3 Ounce Coffee Liqueur (Kahlua)
• 1 Ounce White Rum (Bacardi Silver)
• 1.5 Ounces Black Rum (Myers’s)

Shake and pour into Tiki Head or tumbler.  Garnish with pineapple fronds ~ flagged orange & cherry
