Apricot Ginger Fizz

 

This is stone fruit season, and we never miss the opportunity to use fresh harvests in our cocktail creations.  A basket of ripe apricots inspired today’s clever cocktail, the Apricot-Ginger Fizz.  While apricot liqueur is a wonderful thing to have on your backbar, if you really want to get the best possible flavor into your cocktail, there is no substitute for fresh fruit.  To craft our Fizz we made simple syrup infused with fresh apricots and a bit of grated ginger.  The ginger adds a spicy bite to the sweet-tart nature of the apricots.  We spike our Fizz with well-bred aged golden rum and splash it up a bit with some sparkling water for a delightfully refreshing summer cocktail that is a real crowd pleaser.  Have extra Apricot-Ginger Simple Syrup?  Mix it with plain sparkling water for a non-alcoholic drink the kids will love!  Cheers!

 

Apricot-Ginger Fizz

In a shaker glass filled with ice add:

  • 1 ½ Ounces Aged Rum (We Used Plantation 5 Year)
  • 2 Ounces Apricot-Ginger Simple Syrup
  • ½ Ounce Lime Juice

Shake till painfully cold.  Strain into a highball glass over fresh ice.  Top with sparkling water, give it a stir with a tall straw.  Garnish with a lime wedge.

 

*Apricot-Ginger Simple Syrup

In a small saucepan add:

  • 1 Cup Water
  • 1 Cup White Sugar

Bring to a slow rolling boil, reduce heat and add:

  • 2 Cups Pitted and Diced Fresh Apricots
  • 1 Tablespoon Fresh Grated Ginger Root

Simmer covered on a low heat for 20 minutes.  Turn off the heat and let syrup cool.  Strain through a fine sieve into a sterile glass bottle (pressing out and discarding the pulp of the apricot).  Apricot-Ginger Simple syrup will last 5-7 days in the refrigerator.
