We love Calvados apple brandy and the recent purchase of a new bottle led us to today’s Clever Cocktail. First featured in Harry Craddock’s The Savoy Cocktail Book (1930) the Applejack Rabbit cocktail is a simple drink to prepare with only four easy ingredients. The original recipe calls for Laird’s Applejack and if you happen to have a bottle of Laird’s laying around it will work beautifully, but if you want to up the ante, then we suggest a “Fine” or V.S. Calvados in place of the domestic Applejack. The other factor in the quality of the drink is the type of Maple Syrup used in preparation. Try to find grade “B” which is a darker rendition and one which adds an added bit of richness to the cocktail.
Applejack Rabbit Cocktail In a shaker glass filled with ice add:
Shake till painfully cold, then strain into a chilled cocktail saucer. Garnish with a lemon twist (optional).
